Collecting, Harvesting, and Processing Shagbark Hickory for Bark Syrup and Smoked Pheasant Shagbark hickory (Carya ovata) is one of the most common trees in Missouri’s forests. Often mixed with other hardwoods, such as oak species, the shagbark hickory can occur in a wide variety of habitats from wet bottomland forests to the drier upland forests. Not only do many wildlife species rely on the shagbark hickory, but people use hickory for wood, smoking meats, eating the savory nuts, and making bark syrup. This program will discuss the importance of the shagbark hickory in Missouri as well as how to make shagbark hickory syrup. We will also be sharing recipes on how to make smoked pheasant using shagbark bark and wood. While this program is intended for adults, all ages are welcome. This is a virtual program.
